What is a paring knife?
A paring knife is a small, smooth-edged all-purpose knife, ideal for peeling (or “trimming”) fruit and vegetables, and for other small or complex jobs (such as deveining a shrimp, de-seeding a jalapeño, “skinning” or cutting small garnishes). Paring knives are generally 6 to 10 cm long. Another way to peel vegetables and fruit is with a peeler.
